Blueberry Banana Protein Waffles
-1 1/4 gf all purpose flour
-2 large ripened- smashed bananas
-2 tsp baking powder
-2 scoops vanilla protein powder
-1 T apple cider vinegar mixed with 2-3 T soy milk (vegan buttermilk)
-1 tsp baking soda
-2 T cornstarch
-1 cup vanilla sesame milk
-1/4 tsp salt
-2 tsp cinnamon
-1 tsp vanilla extract
-1 T ground flax
-1 T chia seeds
-1/2 cup coconut oil
-2/3 cup blueberries (save some for garnishing)
Directions:
Prepare apple cider vinegar and soy milk in a bowl. Set aside for about 5 minutes.
Put bananas in separate bowl and smash. Set aside.Measure out gf flour, salt, baking powder and soda, cinnamon, cornstarch, flax seed, and chia seeds. Add smashed bananas, vanilla extract, milk/apple cider mixture, coconut oil and 2/3 cup blueberries. Mix until incorporated. Put in hot waffle iron to cook.
